THIS EGGPLANT PASTA IS ONE OF ITALY'S MOST LEGENDARY PASTA
- "Today we are making one of Italy's, specifically Sicily, most famous and legendary pastas, Pasta alla Norma, the star of which is eggplant". Video by Not Another Cooking Show

INGREDIENTS: 1 1/2 lbs Eggplant, 1 Lb of Tortiglioni (Rigatoni, Penne, Ziti or any Tube Pasta), Ricotta Salata Grated, 3 Tablespoons Olive Oil, Salt. 

Weekday Sauce: 1 28 oz can Whole Peeled Plum Tomatoes (Bianco Di Napoli are best), 2-3 cloves of Garlic thinly sliced, Fresh Basil, 3 Tablespoons Olive Oil, 1 Tablespoon of Cold Unsalted Butter, Salt.
