SAUSAGE AND PEPPER "BOLOGNESE", AN ITALIAN AMERICAN RAGU - "Taking the Italian American classic, Sausage and peppers and mashing it with the traditional Ragu alla Bolognese from Emilia-Romagna. The result is a ragu Italian Americans can all their own". Video by Not Another Cooking Show.
INGREDIENTS: 1 Lb Paccheri, 2 Red peppers Sliced Thin, 1 Onion Sliced Thin, 1 1/2 Lbs Hot Italian Sausage removed from their casings, 3 Tablespoons Olive Oil, 1 Tablespoon Chopped Calabrian Chilli, 2 cloves of Garlic Sliced Thin, 2 Tablespoons Tomato Paste, 4 Tablespoons of Vodka, 1 Pint (2 Cups) of Heavy Cream, Pecorino Romano To Taste, Salt to taste.
Not Another Cooking Show: I believe cooking should be a basic human skill, like reading, writing, or driving a car. I don't have a way with words like I do with a camera, so let the late, great Anthony Bourdain explain my purpose: "But I do think the idea that basic cooking skills are a virtue, that the ability to feed yourself and a few others with proficiency should be taught to every young man and woman as a fundamental skill, should become as vital to growing up as learning to wipe one’s own ass, cross the street by oneself, or be trusted with money.” My goal is to make sure more people are cooking today, and cooking with confidence, than there was yesterday.
